These pancakes are fuel for your brain. They give a sneaky, decent clout of vegetarian protein and omega 3 fatty actids, and the blueberries provide a rich source (sauce) of antioxidants that are clinically proven to enhance brain activity.
Chia Pancakes
Mix together:
- ¼ cup of quinoa flour
- ¼ cup of buckwheat flour
- ½ cup of almond meal
- ½ cup of chia meal
- ¼ cup – ½ cup of xylitol to taste
- 1 tsp xanthan gum
- optional cinnamon
blend:
- 1 beaten egg
- 1 cup of water (you may need a little more to get the texture you like, but you can add that afterwards)
Mix the wet ingredients into the dry, and stir well.
Lighly grease a pan and heat to low-medium.
Spoon 1-2 Tbspns of mixture into the pan per pancake and fry lightly, flipping once, till each pancake is golden brown on both sides.
Blueberry sauce
- ½ cup of blueberries (frozen is fine)
- ½ cup of water
- 2 tsp vanilla essence
- ¼ cup of xylitol or agave to taste
- 1 tsp xanthan gum
Heat the all ingredients except xanthan gum in a small saucepan on medium heat, and stir until they are all nicely melted together. Add a dash of extra water and the xanthan gum, and continue to stir until you have a thick sauce.
Serve with pancakes…
